Pomegranate-Ginger Sparkler

1/2 cup granulated sugar
1 piece (2 inches/5 cm) fresh ginger, peeled and sliced
1/4 cup pomegranate juice, chilled
4 teaspoons lemon juice
1 dash aromatic bitters
1 1/4 cups sparkling wine, chilled
1/4 cup pomegranate seeds
1 piece candied ginger, halved

"Pomegranate seeds and a little bubbly make this a festive option for entertaining. To make an extra-
special garnish, add a few pomegranate seeds to each well of an ice cube tray and top them up with
water. Freeze and then serve alongside the sparklers."

In saucepan, bring sugar, ginger and 1/2 cup water to boil, stirring often. Remove from heat; let cool for
20 minutes.

Strain syrup through fine-mesh sieve; discard ginger. Refrigerate until chilled, about 30 minutes. (Make
ahead: refrigerate in airtight container for up to 1 month.)

In bowl, stir together pomegranate juice, lemon juice, bitters and 3 tablespoons of the syrup; reserve
remaining syrup for another use.

Divide pomegranate juice mixture among two champagne glasses; pour in sparkling wine. Add
pomegranate seeds; garnish glasses with candied ginger.

Serve immediately.

Total time: 1 1/4 hours
Makes 2 servings.
