  After checking a couple of recipes on line, I came up with this version of baked corn. It got rave reviews from the family; even my daughter who does not care for corn at all.

Baked Corn with Cheese

2 quarts fresh cut corn (See Note)
1/4 cup onion, diced
2 cups cheddar cheese, shredded
2 eggs, well beaten
1/3 cup sugar
2 tablespoons flour
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon black pepper
2 teaspoons parsley flakes
...
1 cup milk
...
3/4 cup dried bread crumbs
3 tablespoons butter, melted

Preheat oven to 350F.

Mix first 10 ingredients. Gradually add milk, mixing well. Pour into 13x9 greased baking dish.

In small bowl, mix bread crumbs and melted butter; sprinkle over corn mixture.

Bake in preheated oven for about 1 hour, or until bubbly and brown.

Let set about 10 minutes before serving.

Note: After you cut the kernels off the ears, take a paring knife and scrape the cobs getting all that good stuff you left behind including the milk. Catch it all into the same bowl with the kernels.
