Here is a wonderful recipe. I made it for a picnic and had many requests
for the recipe.

Mr. Food's Nutty Pineapple Cake

1 clove crushed pineapple -- (20-ounce) undrained
2 cups granulated sugar
2 eggs -- beaten
2 cups all-purpose flour
2 teaspoons baking soda
1 cup chopped walnuts
1 8-ounce package cream cheese -- softened
1 stick butter -- softened
1 16-ounce package confectioners' sugar
1 teaspoon vanilla extract

Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray and flour.

In a bowl, stir together crushed pineapple with juice, sugar, and eggs. Add flour, baking soda, and walnuts. Spread mixture into baking dish.

Bake 30 to 40 minutes, or until a toothpick inserted in the center comes out clean. Cool completely.

To make frosting, in a bowl, combine cream cheese, butter, confectioners' sugar, and vanilla. Spread over cooled cake. Refrigerate until ready to serve.

Serves 24.

Note If you want to sprinkle some chopped walnuts on top of the
frosted cake, go right ahead! It'll only add to the "OOH IT'S SO
GOOD!!®" of this great cake!

NOTES : There's something "nutty" about this cake, and we think it has
to do with just how good it tastes! Pineapple and walnuts come together
to make a delicious moist cake, with a bit of a crunch. And the homemade
cream cheese frosting is really just "the icing on the cake!"
Bobbie's Note: This was a fantastically good cake! The cake itself was
very easy to put together and the homemade cream cheese frosting was
exceptionally good. I took it to a pot luck and had many requests for
the recipe.

This simple recipe has been something I turn to time and again.

Russian Chicken

1/2 cup of apricot preserves
1 (16 oz.) bottle of Russian salad dressing (if you can't find Russian dressing, Catalina dressing will do just fine)
4 to 5 boneless, skinless chicken breasts
1/2 onion, chopped

Place chicken breasts inside slow cooker.

In a bowl, place the half cup of peach apricot preserves with the entire bottle of Russian salad dressing. Stir together until well mixed and smooth. Stir in the chopped onions. Mix well.

Pour the mixture over the chicken.

Cook on low for 8 hours.

Serve over a pile of white rice, with a side of green beans.

Note: You can either slice the breasts or pull them apart with two
forks. You can substitute noodles or something else for the base and
can use different salad dressing for different taste.
