New Mexico Breakfast Burrito

Amount Measure Ingredient -- Preparation Method

Crisp bacon pieces
or could be sausage or ham
Scrambled eggs
[or in the case of hubby, egg whites]
Flour tortilla
Cheese
Red chile sauce

Cook scrambled eggs, add cooked meat. Roll tightly in warmed tortilla.
Cover with red sauce and sprinkle with cheese and place under the boiler
just to melt cheese. The low fat cheese (husbands) won't melt under the
broiler but gets like cardboard and doesn't taste any better so it needs to
be put inside the tortilla with the eggs.

Red Chile Sauce:
2 tablespoons shortening
2 tablespoons flour
1/4 cup red chile powder (mild or hot)
2 cups cold water
1/4 teaspoon salt
1/2 teaspoon garlic salt (I use a fresh clove)
Oregano - small amount
Cumin - small amount
Cilantro - small amount

Heat shortening in a medium size saucepan on medium heat. Stir in flour and
cook for one minute. Add chile powder and cook for an additional minute.
Gradually add water and stir, making sure that no lumps form. Add
seasonings to sauce and simmer at low heat for 10 to 15 minutes.

Contest Notes:

You guessed it - we have been trying to get out from under all our snow
here in New Mexico and the biggest problem is that we don't even own a
snow shovel and the shops are out of them probably for the season. Here's
a family favorite that is actually a New Mexico breakfast but we love
putting this together for a fast and tasty dinner. I keep the red chile
sauce at the ready in the fridge - recipe follows.

---> Wow! I have to admit that I have trouble accepting the words "snow"
and "New Mexico" in the same sentence! Thanks for kicking off our recipe
