Saw this on the Net and thought it was good idea to share.

If you love pickles, and you lack the inclination to put
up your own, you can still have homemade fresh pickles cheaply.
I like dill pickles of a particular brand. As I eat the store-
bought contents, I buy Kirby cucumbers, slice them up and pop
them into the brine in the jar. In about three or four days the
Kirbies become pickles, and are even yummier than the bought
ones as they're fresher and crisper.

This works pretty well for beets as well - I find that a 16-
ounce can of beets will fit (though a little tightly) into one
of those 16-ounce jars of pickled beets. Be absolutely sure,
though, to pour off the juice from the can before you pack the
beets into the pickled beet juice!
