8 pieces boneless skinless chicken thighs
1 1/4 cups low-sodium soy sauce
1 1/4 cups water
1 cup Splenda No Calorie Sweetener
1/3 cup ginger root

Peel and slice ginger root. Place all ingredients into large pot.
Boil until chicken is no longer pink.

(You can substitute chicken breasts for the thighs to lower your points.)

Servings - 8. WW Points per serving - 5.

No Sugar Low Fat Zucchini Bread

8 cups reduced-fat Bisquick
10 cups shredded zucchini
3 cups Splenda
2 quarts low sugar applesauce
9 large eggs
3 teaspoons pure vanilla extract
2 tablespoons baking powder
1 tablespoon ground cinnamon
1 tablespoon ground allspice
1 tablespoon ground nutmeg
2 cups chopped walnuts
2 boxes low fat/carb cereal (your choice) -- (15 ounce)

Pre-heat oven to 350 degrees F.

In a large mixing bowl, combine all ingredients except nuts and cereal
together until well-combined. Fold in chopped nuts and cereal and mix until
well-combined.

Spray 5 (9 X 5-inch) bread pans with cooking spray.

Divide batter between five pans. Bake for one hour at 350 degrees F or
until a toothpick in the center comes out clean. Remove finished breads
from pans and cool on wire cake racks.

Yields 5 loaves.

Wrap in heavy-duty aluminum foil and freeze additional loaves for later
use.
