Cherry Cheese Pizza

Amount Measure Ingredient -- Preparation Method

1 cup flour
1 pinch baking powder
1/4 cup cold butter
2 tablespoons shortening
3 tablespoons water -- (3 - 4 tablespoons)
8 ounces soft cream cheese
1/2 cup sugar
2 eggs
1 teaspoon vanilla
1/3 cup chopped pecans -- or almonds
*TOPPING*
2 1/2 cups pitted cherries -- fresh or frozen
1/3 cup sugar
2 tablespoons cornstarch
1 tablespoon butter
1 dash almond extract
Red food coloring -- optional

Combine flour and baking powder, cut in butter and shortening until coarse
crumbs. Gradually add water until dough forms a ball. Roll out into a 14-
inch circle. Place on an ungreased 12-inch pizza pan. Flute edges to form a
rim, prick bottom and bake 350F for 15 minutes.

Meanwhile, beat cream cheese and sugar until smooth. Beat in eggs and
vanilla. Add nuts. Spread over crust and bake 10 minutes longer. Cool.

Drain cherries, reserving 1/3 cup juice. Set cherries and juice aside.

In saucepan combine sugar and cornstarch, stir in reserved juice until
smooth. Add cherries. Cook and stir over medium heat until mixture comes to
a boil. Cook and stir 2 minutes longer. Remove from heat and stir in
butter, extract and coloring. Cool and spread over cream cheese layer.
Garnish with whipped cream and chocolate shavings.

Cherry Dessert Pizza

Amount Measure Ingredient -- Preparation Method

Dessert Pizza Dough
2 cups bread flour
1 1/2 cups all-purpose flour
2 teaspoons yeast
1 teaspoon salt
1/4 cup drained liquid from yogurt
or 1/4 cup warm milk
1 cup warm water
1/2 stick softened butter -- (1/8 pound)
2 tablespoons honey
Topping:
1 can cherry pie filling
[2 may be better for more cherries if desired]
1 cup flour
1 cup brown sugar
1 stick butter or margarine -- (1/4 pound)
1/4 cup cherry preserves -- or jam (NOT jelly)
Optional:
Finely chopped nuts
Sprinkle of cinnamon and nutmeg

This is really a tender pizza dough with a sweet cherry topping and vaguely
similar to a coffee cake.

Prepare dough in the bread machine per manufacturer's instructions on the
dough cycle, adding more flour or liquid as needed. When done, remove
dough, punch dough and roll out into a large rectangle. Place/pat to fit
into a large 10- x 15-inch baking pan or similar pan. Let rise 10 minutes
while preparing topping. Or place the dough in a zip lock bag and chill
overnight, punching down if needed.

Prepare pizza.
Spread cherry pie filling over risen dough in pan.
Combine cold cut up butter, brown sugar, flour and preserves and form into
coarse crumbs with fingers. Sprinkle over pie filling.

Bake pizza 400F until golden and dough is browned on bottom, about 20 to 30
minutes. While warm cut into squares or pieces as desired.
Drizzle with a powdered sugar icing or dust with powdered sugar if desired.

Note : change the variety of the dessert pizza. eg. use peach pie filling
and peach preserves or blueberry filling and blueberry preserves etc. etc.

Chicken Caesar Salad Pizza

2 chicken breasts
[omit if making plain salad pizza]
2 garlic cloves -- minced
1/4 cup grated Parmesan cheese
1 small onion -- chopped
1 red bell pepper -- chopped
1 cup shredded mozzarella cheese
1 recipe refrigerated pizza dough
1/2 head Romaine lettuce -- shredded
2 tomatoes -- diced
Prepared Caesar salad dressing
[creamy is the best]
Croutons -- (optional)

Years ago I fell in love with a Caesar salad pizza. I made my own similar
to below but left out the chicken sometimes. I loved the contrast of the
hot cheese and the cold creamy Caesar salad dressing. Omit the croutons,
they aren't necessary!

Cook chicken and chop into 1-inch pieces.

Over medium heat, combine garlic, onion and red bell pepper with 2
tablespoons Caesar salad dressing and cook until vegetables are tender; add
chicken pieces and continue cooking for another minute.

Roll out pizza dough to cover pizza stone and create a ridge around the
edge. Brush pizza dough lightly with salad dressing. Spread chicken and
vegetables on dough. Top with mozzarella and Parmesan cheeses.

Bake at 350 degrees F. for 20 - 25 minutes or until cheese is bubbly and
crust is golden.

While pizza is baking, chop lettuce and tomato and toss with salad dressing
to taste.

When pizza comes out of oven, place salad on top of pizza and garnish with
croutons if desired.
