Ole (an old Fiji recipe)

2 tablespoons sugar
6 cups water
2 cups sugar
1 tablespoon citric acid
2 small green chilies -- (2 to 3)
2 teaspoons cloves
1 cinnamon stick -- (3 inches/6 cm)

In a pot, caramelize the 2 tablespoons of sugar then add the water, the 2
cups of sugar, citric acid, chilies, cloves and the cinnamon stick.

Boil for 1 hour; strain and pour into hot sterile bottles and seal.

Makes 7 1/2 cups or 1.62 liters.

Authors' notes. This cordial has a refreshing and slightly hot flavour. The
chilies could be left out or replaced with a little green ginger.

Hallie's note. The recipe doesn't mention if this is to be used as a base
and served with the addition of water or sparkling water so I guess a
person will just have to experiment.

Orange Muffins

1 1/2 cups all-purpose flour
1/4 cup granulated sugar, Marie used Splenda
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon ground cardamom
1/2 teaspoon salt
1 cup canned red kidney beans, mushed in food processor
1 egg -- beaten
OR 2 egg whites...Marie used egg whites
1/4 cup olive oil
Grated rind of one orange
1/2 cup orange juice
1/3 cup orange marmalade
1/3 cup chopped walnuts
OR pecans, used walnuts

In a mixing bowl stir together flour, sugar, baking powder, baking soda,
cardamom and salt.

In a small bowl combine beans, egg whites, oil, orange rind, juice and
marmalade. Stir in walnuts, then add to dry ingredients all at once, stir
just until moistened. Do NOT over-mix.

Spoon into nonstick or paper 2 1/2-inch muffin cups, filling about 3/4
full.

Bake at 375F for 20 minutes or until tops are firm to touch.

Makes 12 muffins.
