Chili Powder

1/4 cup chili powder, in the heat you like
[dried ground chili powder, not the supermarket can marked "chili powder"]
1/2 tablespoon cayenne
2 tablespoons garlic powder
1 tablespoon ginger
1 tablespoon cloves
1 tablespoon dry mustard
1 tablespoon nutmeg
1 tablespoon cumin
1 tablespoon Mexican oregano

Combine and store in tightly covered jar in cool, dark place.

Creme-Filled Chocolate Sandwich Cookies

**Cookies**
1 package Pillsbury Plus Dark Chocolate Cake Mix
1/2 cup butter or margarine -- melted
1 egg -- slightly beaten
**Filling**
2 cups powdered sugar
1/4 cup shortening
1/2 teaspoon vanilla
1 egg white -- (see Note)

Heat oven to 350F (180C).

Combine all the cookie ingredients in a large bowl; mix well. Firmly shape
the dough into 1-inch (2.5 cm) balls. Place 2 inches (5 cm) apart on
ungreased cookie sheets. Bake at 350F (180C) for 9 to 13 minutes or until
set. Cool 1 minute; remove from cookie sheets and cool completely.

In a small bowl, combine 1/2 cup (125 ml) of the powdered sugar, the
shortening, the vanilla and the egg white; blend well. Add the remaining
powdered sugar; beat until smooth and creamy.

Spread a heaping teaspoon of filling between 2 cookies; repeat with the
remaining cookies.

Makes 24 sandwich cookies.

No changes for altitudes above 3500 feet.

Note. One egg white is called for in the filling. Although there is still
not a 'salmonella free' egg the incidence of this nasty being present in
eggs in Canada and the U.S. has been much reduced. If it is a concern you
can use pasteurized eggs or some other commercially prepared product.
