Egg in a Nest (For 1)

Amount Measure Ingredient -- Preparation Method

1 slice bread -- buttered
25 milliliters butter or margarine -- (2 tablespoons)
1 egg
Salt and pepper to taste

Preheat a frying pan to medium heat.

Cut a 5 centimeter (2-inch) circle from the center of the slice of bread.
Carefully break an egg into a small bowl.
Put the butter or margarine into the heated frying pan; swirl it around
until it melts then place the bread into the pan.
Slip the egg from the bowl into the hole in the center of the bread slice.
Season with some salt and pepper.
Cook until the egg sets then turn the bread and egg over; cook to the
desired degree of doneness of the egg.

Makes 1 serving.

Hallie's note. If you like your eggs sunny-side up you can toast the slice
of bread in the pan on one side then turn it over before adding the egg.
You may want to cover the pan after adding the egg if you use this method.
Also, with a recipe of this nature you can easily vary the seasoning to
your taste; you don't need to stick to just salt and pepper. You can also
leave the seasoning out altogether and let the person eating it do any
seasoning they wish (hopefully they won't drown it in catsup or
Worcestershire sauce but if they do at least it will be their choice and
they can't blame the result on the cook). <G>

4 cups flour -- (4 to 4 1/2 cups)
1 cup sugar
1 teaspoon salt
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cloves
1/4 teaspoon mace
2 packages yeast
3/4 cup softened margarine
1 1/2 cups hot water
2 eggs -- (room temperature)
1 1/2 cups raisins
3/4 cup chopped pecans
1/4 cup chopped citron

Combine 1 3/4 cups flour, sugar, salt spices and yeast in large electric
mixer bowl; add margarine and hot water. Beat for 2 minutes at medium
speed. Add 2 eggs and 3/4 cup flour; beat for 2 minutes at high speed. Add
raisins, pecans, citron and enough remaining flour to make stiff dough; mix
well by hand.

Turn batter into greased 10-inch tube pan. Cover; let rise for 1 hour and
30 minutes or until doubled in bulk.

Bake at 375F. for 45 minutes or until cake tests done.
