Orange Beef and Broccoli Stir-fry

1/4 cup low-sodium beef broth -- or water
1 tablespoon soy sauce
1 tablespoon lemon juice
2 teaspoons cornstarch
1 tablespoon vegetable oil
1 pound top round London broil -- cut into strips
10 ounces frozen broccoli spears -- thawed and patted dry
1 tablespoon grated orange peel
1/4 cup orange juice
Salt and pepper

Whisk together broth, soy sauce, lemon juice and cornstarch in a bowl; set
aside.

Warm oil in a wok or large skillet over Medium-High heat until hot. Add
beef, turn heat to High and cook, stirring constantly, until no longer pink
2 to 3 minutes.

Add broccoli and cook, stirring, until warmed through, about 2 minutes.

Stir in reserved sauce, orange zest and juice. Cook, stirring constantly
until sauce is thickened, about 2 minutes. Season with salt and pepper.

Makes 4 servings.

NOTES. Kitchen Tips:
Be Fresh: Replace the frozen broccoli with fresh, cook it in boiling salted
water for 2 minutes first.

Get Creative: Toss in chopped fresh ginger, sliced scallions, strips of red
and yellow bell pepper or slivered snow peas before serving to dress up the
dish.

Intensify the Flavor: If time permits, marinate the beef overnight in a
mixture of orange zest, chopped fresh thyme, a crushed clove of garlic and
olive oil. Pat the meat dry before starting to cook the stir-fry.

Choose A Side: Serve the stir-fry over brown or white rice or, try
buckwheat noodles for a different flavor and texture.

Bobbie's Note: I made half of this dish. It was very good. I served it over
rice and used fresh broccoli.
