Desperation Casserole

Amount Measure Ingredient -- Preparation Method

8 ounces whole wheat egg noodles
1 cup frozen green beans
1/2 medium onion -- chopped
or 1 1/2 teaspoons onion powder
2 garlic cloves -- minced
or 1/2 teaspoon garlic powder
10 3/4 ounces Healthy Condensed Cream of Mushroom Soup -- (1 can)
12 ounces tomatoes with green chilies -- drained (1 can)
4 ounces canned chopped green chilies -- drained (1 can)
6 ounces Reduced Fat Sharp Cheddar Cheese -- grated, divided
[1 1/2 cups]
1 cup cooked turkey -- or chicken
1/2 cup cracker crumbs
[about 20 Ritz Crackers, crushed]

Preheat oven to 375F and grease a 7x11-inch pan.

Cook the noodles according to package directions. Leave them slightly
underdone because they'll cook more in the oven.

While the noodles are cooking, cook the onion and garlic a large bowl in
the microwave on high for 3 minutes.

When they're all ready, mix the soup, tomatoes, chilies, turkey and 1 cup
cheese together in the bowl with the onions and garlic. Pour in prepared
pan and place in oven.

Bake 20 minutes or until it's bubbly, then remove and sprinkle with the
remaining cheese and then the cracker crumbs. Bake another 10 minutes. Let
sit 5 minutes before serving.

NOTES:
I came up with this one night when Jay wouldn't cook and I had to scrounge
up something. It's just a basic casserole--meat, starch, veggies and a
binder.

Like most of my recipes, this is incredibly versatile. Change the
vegetables, the soup, the noodles, the meat. It'll still be good.
