One-Dish Caramel Pecan Coffee Cake

Amount Measure Ingredient -- Preparation Method

Batter:
1 3/4 cup all purpose flour
4 1/2 teaspoons yeast -- or 2 envelopes
1 tablespoon sugar
1/2 teaspoon salt
3/4 cup warm water -- 120F
Sugar Topping:
1/4 cup sugar
1 teaspoon ground cinnamon
Caramel Pecan Topping:
1/3 cup light corn syrup -- or dark
1/3 cup brown sugar
2 tablespoons butter -- melted
1/2 cup chopped pecans

Mix batter ingredients in a pre-sprayed 9 1/2-inch deep dish pie plate.

Stir together corn syrup, brown sugar and butter in a small bowl. Add
pecans and mix well.

Combine 1/4 cup sugar and cinnamon in a small bowl.

Top batter evenly with cinnamon sugar topping, then spoon the caramel
topping over that.

Place pan in cold oven and turn on oven to 350F. Bake 25 minutes until
lightly browned and firm in center. Cool slightly before serving.

NOTES: I like to mix the batter in a bowl and then place in pan. Be sure to
do the batter first; that way it rests while you make the toppings.

One-Dish White Pizza with Whole Wheat Crust

1 " Crust" Batter:
Cooking spray
1 cup all purpose flour
1/2 cup whole wheat flour
1 tablespoon sugar
1/2 teaspoon garlic salt
4 1/2 teaspoons instant yeast -- 2 envelopes
3/4 cup milk -- warmed to 120F to 130F
1/4 cup olive oil
Vegetable Mixture:
3 ounces feta cheese -- crumbled
2 cup fresh spinach -- packed and
coarsely chopped
1 tablespoon olive oil
4 ounces button mushrooms -- sliced
1/2 cup red bell pepper -- cut in strips
Cheese Topping:
1 1/2 cups part skim mozzarella cheese -- grated (6 oz)
1/2 teaspoon Italian seasoning

Mix batter ingredients together in a pre-sprayed 8 X 8-inch baking dish.

Sprinkle with feta cheese and spinach. Sauté mushrooms and pepper strips in
olive oil over medium-high heat for 2 minutes.

Top batter evenly with mushroom mixture. Sprinkle with mozzarella cheese
and herbs.

Bake by placing in a cold oven. Set temperature to 350F; bake for 30
minutes or until baked through.

NOTES
The batter is rather thick. And I added some chopped sun-dried tomatoes
because I didn't have any red bell peppers. I only use about 1 cup of
mozzarella. You can make any kind of "pizza" on this crust.
