Back to Recipe List	* Exported from MasterCook * Raisin Bran Banana Nut Muffins Recipe By : Serving Size : Preparation Time :0:00 Categories : Volume 12-10 Sep 2009 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups raisin bran 1/2 cup milk 3/4 cup whole wheat flour 3/4 cup all-purpose flour 3 1/2 teaspoons baking powder 1 teaspoon baking soda 1/4 teaspoon salt 1/2 teaspoon cinnamon 1 cup mashed banana -- (about 3) 1/4 cup white sugar 1/4 cup brown sugar 1/4 cup vegetable oil 1 egg Mix together bran, milk, oil and egg. Add baking powder, baking salt, cinnamon, salt. Mix. Add banana, sugar and mix just until all ingredients come together. Line muffin tins with paper and divide batter. Bake at 350F for 18 minutes or until toothpick in center comes out clean. Notes: If you use raisin nut bran, these muffins are automatically nut muffins. I didn't have that kind of cereal so I added some chopped walnuts and some extra raisins.
