Artichoke-Turkey Casserole

1/2 cup chopped carrot
1/2 cup red sweet pepper -- chopped
1/4 cup sliced green onions
1 tablespoon butter or margarine
1 can condensed cream of chicken soup -- (10 1/2-ounces)
8 ounces frozen artichoke hearts -- thawed and cut up
[8- to 9-ounce package]
1 1/2 cups cooked turkey or chicken -- chopped
[about 8 ounces]
1 cup cooked long grain rice -- or wild rice
2/3 cup milk
1/2 cup shredded mozzarella cheese -- (2 ounces)
2 slices bacon -- crisp-cooked,
drained and crumbled
1/2 teaspoon dried thyme -- crushed
3 tablespoons grated Parmesan cheese

In a large skillet, cook carrot, sweet pepper and green onions in hot
butter until carrot is crisp-tender. Remove from heat. Stir in cream of
chicken soup, artichoke hearts, turkey, rice, milk, mozzarella cheese,
bacon and thyme. Transfer turkey mixture to an ungreased 2-quart
rectangular baking dish. Sprinkle with Parmesan cheese.

Bake, covered, in a 350 F. oven for 20 minutes. Uncover and bake about 20
minutes more or until bubbly. Let stand for 10 minutes before serving.

Makes 6 servings.

Make-Ahead Directions: prepare as directed except after assembling, cover
and refrigerate for up to 24 hours. Bake, covered, in a 350 F. oven for 30
minutes. Uncover, and bake 20 minutes more or until bubbly.

To Tote: Do not let stand after baking. Cover tightly. Transport in an
insulated carrier.

Notes: A poultry-rich bake is a handy way to use leftover chicken or
turkey. This recipe adds a few flavor flourishes with artichokes and
crisp crumbled bacon.
