Kielbasa Skillet Stew

5 slices bacon
1 medium onion -- chopped
1 pound smoked fully cooked kielbasa -- - thinly sliced
2 cans great northern beans -- (15 1/2 oz) undrained
16 ounces tomato sauce -- (2 cans)
1 can chopped green chilies -- (4 ounces)
2 medium carrots -- thinly sliced
1/2 medium green pepper -- chopped
1/2 teaspoon Italian seasoning
1/2 teaspoon dried thyme
1/8 teaspoon pepper

In a 12-inch skillet, cook bacon until crisp; remove to paper towel to
drain. In drippings cook onion, and sausage until the onion is tender;
drain. Stir in remaining ingredients; bring to a boil. Reduce heat; cover
and simmer for 45 minutes or until vegetables are tender, stirring
occasionally. Crumble bacon and sprinkle on top.

Makes 6 servings

Machelle's Notes: I grew up on a Montana ranch, and this dish
reminds me of the kind we used to prepare for the hay and harvest
crews. The bacon and sausage provide rich flavor to this comforting stew.
When I make this dish, I share a taste of my country memories with my
family.

Bobbie's Note: I cut this in half for 2 plus a third helping for a
lunch. Very good. Would also be good with about 1/2 cup macaroni or
other small pasta added.
