Vegan Berry Coconut Crisp

Topping:
1 1/2 cups flour
1 1/2 cups shredded coconut
1/3 cup sugar *
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
10 tablespoons cold non-hydrogenated vegan margarine
Filling:
1 cup fresh blueberries
1 cup fresh raspberries
12 ounces frozen mixed berries -- (1 bag) partially thawed
[I use blueberries, strawberries, raspberries
and blackberries]
2 tablespoons tapioca starch -- (or crushed instant tapioca)
2 tablespoons water
1/3 cup sugar *
1/2 teaspoon coconut extract
1/2 teaspoon vanilla extract

For the topping: Mix together the flour, coconut, sugar, nutmeg and
cinnamon. Add the margarine in small pieces and either use a pastry knife
or your hands to mix the margarine into the flour until coarse crumbles
form.

For the filling: Place the berries, tapioca and water in a 9-inch square
baking dish or 8x10-inch casserole. Stir together to dissolve the tapioca
starch. Add the sugar and extracts; mix to combine. Sprinkle the topping
over the berries. Bake at 350 degrees for 45 minutes ­ the filling should
be bubbly. Remove from oven and let cool for about 10 minutes. Serve with
vegan ice cream.

Serves 9-12

* I use vegan granulated sugar. You could try other sweeteners. Cane sugar
or regular white refined sugar is typically processed with animal product,
so some vegans avoid it."
