Liqueur Cream Tart

*Crust*
1/2 cup almonds -- (125 mL)
3/4 cup vanilla wafers -- (175 mL)
1/4 cup unsalted butter, melted -- (50 mL/50g)
*Filling*
Zest of 1 orange
1 cup sugar -- (250 mL/250g)
1/3 cup chilled unsalted butter -- (75 mL/75g)
8 ounces chilled cream cheese -- (225g)
2/3 cup liqueur -- (150 mL)
[such as Grand Marnier, Cointreau, Triple Sec,
Amaretto, Prunelle, Galliano]
2 cups heavy cream -- (500 mL)

Using the steel knife in your food processor process the almonds until
coarsely chopped. Add the vanilla wafers and process until crumbly. Add the
melted butter and process until the crumbs are moistened. Set aside 2
tablespoons (25 mL) of the crumbs for garnish then pat the remaining
mixture into a 9-inch (23 cm) pie plate. Refrigerate.

Clean and dry the work bowl and steel knife.

Cut the zest into small pieces and with the machine running drop them
through the feed tube. Add the sugar and process until the zest is finely
chopped.

Cut the butter into 1-inch (2 cm) cubes and process on/off, on/off until
blended. Cut the cream cheese into 1-inch (2 cm) cubes, add and process.
Drizzle the liqueur through the feed tube until blended.

Beat the heavy cream separately until light and fluffy. Gently fold into
the cream mixture and spoon into the prepared crust. Sprinkle the top with
the reserved crumbs.

Refrigerate at least 2 hours before serving.

Author's note: This tart can also be served frozen.
