Farm-Style Sausage Bake

6 medium potatoes -- (about 2 pounds) peeled, cubed
3 green onions -- sliced (3 or 4)
2 garlic cloves -- minced
2 tablespoons butter or margarine
3/4 cup milk
2 egg yolks
1 dash pepper
1 dash ground nutmeg
2 tablespoons dried parsley
1 pound smoked sausage -- sliced
1/2 cup diced or shredded mozzarella cheese
2 tablespoons grated Parmesan cheese
1 tablespoon dried thyme -- or sage

Cook potatoes in boiling salted water until tender. Drain and transfer to a
bowl; mash potatoes. Add onion, garlic, butter, milk, egg yolks, pepper and
nutmeg; beat until light and fluffy. Stir in parsley, sausage and cheese.
Spoon into a greased 2-quart (or larger) casserole dish. Sprinkle with
thyme. Bake, uncovered, at 400 F. for 30 minutes or until lightly browned
and heated through.

Yield: 6 servings.

Bobbie's Note: I made half of this recipe and did it in a 2-quart
casserole, so if you do the full recipe, use a large dish. It was
delicious! Yum!!
