Maryland Crab Shells

Amount Measure Ingredient -- Preparation Method

1 tablespoon mayonnaise
2 tablespoon slightly beaten egg
1 teaspoon lemon juice
1 teaspoon Old Bay seasoning
1/8 teaspoon salt
6 ounces crabmeat -- drained and flaked (1 can)
2 teaspoon green onion -- thinly sliced
1 tablespoon pimento -- chopped
1/4 cup celery, finely chopped
1 box Athens Mini Fillo Shells

In a small bowl, combine mayonnaise, egg, lemon juice, Old Bay seasoning
and salt. Mix well. Add crabmeat, onions, pimento and celery. Mix lightly.
Spoon 1 rounded teaspoon of filling into each Fillo Shell.

Bake in preheated 350F oven for 20-25 minutes. Serve warm.

Mini Greek Pizza Muffins

2 tablespoons extra-virgin olive oil
2/3 cup finely chopped onion
2/3 cup finely chopped red bell pepper
1/3 cup whole-wheat pastry flour
1/3 cup all-purpose flour
2 teaspoons baking powder
1 1/2 teaspoons chopped fresh oregano, or 1/2 teaspoon dried
1 teaspoon sugar
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/3 cup low-fat milk
1/3 cup crumbled feta cheese
1 large egg, well beaten
2 tablespoons tomato paste
2 tablespoons chopped kalamata olives

Heat oil in a large skillet over medium heat. Add onion and bell pepper;
cook, stirring often, until the onion is tender, about 5 minutes. Transfer
to a large bowl and let cool for 10 minutes.

Meanwhile, preheat oven to 400F. Coat a mini-muffin pan with cooking spray.

Whisk whole-wheat pastry flour, all-purpose flour, baking powder, oregano,
sugar, garlic powder and salt in a medium bowl.

Stir milk, feta, egg, tomato paste and olives into the onion mixture. Make
a well in the dry ingredients; add the wet ingredients and stir until just
combined. Fill the prepared muffin cups two-thirds full.

Bake the muffins until lightly browned, 13 to 15 minutes. Cool in the pan
for 5 minutes before turning out onto a wire rack. Serve warm or at room
temperature.

Active Time: 30 Minutes
Total Time: 50 Minutes 2 dozen mini muffins

Make Ahead Tip: Store in an airtight container for up to 2 days. Serve at
room temperature or reheat at 350F.

Mr. Food's Bacon and Cheese Potato Casserole

3 1/2 cups water
1/2 cup butter -- (1 stick)
1 teaspoon salt
1/2 teaspoon black pepper
3 1/2 cups instant potato flakes
1 small onion -- finely chopped
1/2 cup bacon bits
1 1/2 cups shredded Swiss cheese -- (6 ounces)
1 cup heavy cream -- (1/2 pint)
1 scallion -- thinly sliced (1 to 2)

Preheat oven to 350 degrees F. Coat an 8-inch square baking dish with
cooking spray.

In a saucepan, bring water, butter, salt, and pepper to a boil over high
heat. Remove saucepan from heat and gently stir in potato flakes, onion and
bacon bits until well combined.

Spoon potato mixture into prepared baking dish.
Sprinkle with cheese then pour cream over top. Sprinkle with scallions.

Bake 35 to 40 minutes or until heated through and edges are golden.
Serves 6.

Notes: For those of you who are skeptical about using potato flakes,
trust us on this one...you won't be disappointed. And feel free to
substitute shredded Cheddar cheese instead of the Swiss or your favorite
variety.
