Ham Rarebit Sandwiches

Amount Measure Ingredient -- Preparation Method

2 tablespoons butter
1 tablespoon flour
1/4 teaspoon salt
1 dash pepper
1/4 teaspoon dry mustard
1 dash cayenne
3/4 cup milk
1/2 cup grated strong Cheddar cheese
2 slices hot buttered toast
2 thin slices cooked ham
Paprika

Melt butter in a small saucepan. Sprinkle in the flour, salt, pepper,
mustard and cayenne; let bubble up. Remove from heat and add milk all at
once. Stir to blend. Return to moderate heat and cook, stirring constantly,
until thick and smooth. Add cheese; continue heating and stirring until
cheese is melted.

Put toast slices into 2 shallow individual baking dishes. Top with ham and
pour half of the sauce over each.

Put low under broiler and broil until bubbling well. Sprinkle lightly with
paprika and serve immediately.

Serves 2.
