Black Bean and Green Chile Con Queso

8 ounces reduced fat Pepper Jack Cheese -- cubed;
at room temperature
8 ounces low-fat cream cheese -- at room temperature
1 cup light mayonnaise
1/2 cup grated parmesan cheese
3/4 cup canned black beans -- rinsed and drained;
about 1/2 can
4 ounces canned chopped green chiles -- undrained
2 garlic cloves -- minced
2 teaspoons cayenne pepper
or, maybe, chipotle powder; see notes
1 teaspoon hot sauce -- see notes
Dippers:
Celery Sticks
Jicama Sticks
Zucchini Sticks
Tortilla Chips

Place cheeses in 1 1/2-quart slow cooker, cover and cook until cheeses are
melted, about 30 minutes. Mix in remaining ingredients, except dippers,
cover and cook until hot, 1 to 1 1/2 hours.

Variation: Omit chopped green chile, cayenne and hot sauce. Add 1/4 pound
Mexican chorizo, browned and drained, and 2 teaspoons pickled jalapeņos,
minced, after the cheeses are melted

NOTES: "This dip is fiery! Reduce the amount of crushed red pepper and/or
omit the red pepper sauce for a milder dip."

Blackberry Basil Crush

5 ounces blackberries -- (1 container)
1 medium lime -- juice of
8 fresh basil leaves, torn
1/4 cup agave nectar
Soda water, chilled

Muddle the blackberries, lime juice and basil with a wooden spoon into the
bottom of a small glass pitcher.

Divide the berry mixture among 4 glasses and top each glass with 1
tablespoon each agave nectar.

Top off each glass with ice, and soda water. Stir with a cocktail spoon and
enjoy.

Broccoli and Cauliflower Salad

1/4 red onion, thinly sliced
2 slices bacon, cut in small pieces, cooked to crisp
1/2 bunch broccoli, cut into small florets (about 1 1/2 cups)
1/2 small head cauliflower, cut into small florets (about 1 1/2 cups)
2 tablespoons sugar
1 tablespoon red wine vinegar
1 teaspoon Dijon mustard
2 tablespoons vegetable oil
1/4 cup mayonnaise
1/2 teaspoon seafood seasoning, such as Old Bay
Kosher salt and freshly ground black pepper

Shock the onions in an ice water bath for 10 minutes to temper the sharp
flavor, pat dry.

Place the bacon, broccoli, cauliflower and onions in a large salad bowl.

In a small bowl, whisk the sugar, vinegar and Dijon mustard. Slowly drizzle
in the oil, whisking to make an emulsion. Mix in the mayonnaise and seafood
seasoning. Season with salt and pepper. Pour the dressing over the
vegetables and toss.

Note: When Melissa made this recipe on TV, she made the dressing in a
large salad bowl, then layered in the vegetables and tossed it. This means
one less bowl to wash.

Cook Time: 5 min
