   1      Medium        Onion -- Finely Chopped
   2      Large         Tomatoes -- Peeled and Chopped
   1                    Green Pepper -- Finely Chopped
   1                    Cucumber -- Peeled Seeded and Diced
   2                    Scallions -- Minced
   1      Clove         Garlic -- Crushed
     1/4  Cup           Fresh Parsley -- Chopped
   2      Tablespoons   Olive Oil
   2      Tablespoons   Lime Juice
   2      Tablespoons   Red Wine Vinegar
   1 1/2  Tablespoons   Lemon Juice
   1      Teaspoon      Dried Whole Tarragon
   1      Teaspoon      Dried Whole Basil
   1      Teaspoon      Honey
     1/2  Teaspoon      Salt
     1/4  Teaspoon      Pepper
     1/4  Teaspoon      Ground Cumin
   1      Dash          Hot Sauce
Combine all ingredients; stir well. Chill at least 2 hours.

                        Bread:
     2/3  cup           firmly packed brown sugar
     1/2  cup           Land O Lakes Butter -- softened
   1      cup           miniature semi-sweet chocolate chips -- melted
   2                    eggs
   2 1/2  cups          all-purpose flour
   1 1/2  cups          applesauce
   1      teaspoon      baking powder
   1      teaspoon      baking soda
   2      teaspoons     vanilla
     1/2  cup           miniature semi-sweet real chocolate chips
                        Glaze:
     1/2  cup           miniature semi-sweet chocolate chips
   1      tablespoon    Land O Lakes Butter
   5      teaspoons     water
     1/2  cup           powdered sugar
     1/4  teaspoon      vanilla
   1      dash          salt
Heat oven to 350 F. In a large mixer bowl, combine brown sugar and 1/2 cup
butter. Beat at medium speed, scraping bowl often, until creamy (1-2
minutes). Add 1 cup melted chocolate chips and eggs; continue beating until
well mixed (1 to 2 minutes). Add flour, applesauce, baking powder, baking
soda and 2 teaspoons vanilla. Reduce speed to low; continue beating,
scraping bowl often, until creamy (1-2 minutes). By hand, stir in 1/2 cup
miniature chocolate chips. Spoon batter into 5 greased 5 1/2x3  inch mini
loaf pans or aluminum foil pans. Bake for 35 to 42 minutes or until center
crack is dry when touched. Cool 10 minutes. Remove from pan; do not remove
if using aluminum foil pans. 
(Bread can be frozen unfrosted. Remove from freezer; bring to room
temperature before frosting.)
Meanwhile, in 2 quart saucepan combine 1/2 cup chocolate chips, 1
tablespoon butter and water. Cook over Low heat, stirring constantly, until
melted and smooth. Remove from heat. Stir in confectioner's sugar, 1/4
teaspoon vanilla and salt until smooth and creamy. Frost each loaf with
glaze. Cool completely.
Yield: 5 mini loaves (50 servings)
Per serving: 95 calories, 1 g protein, 13 g carbohydrate, 5 g fat, 17 mg
cholesterol, 57 mg sodium

   1      Teaspoon      Beef Bouillon Granules
   1      Teaspoon      Parsley Flakes
     1/2  Teaspoon      Ground Cinnamon
     1/2  Teaspoon      Ground Nutmeg
Combine all ingredients, and store in an airtight container. Serve with
steaks, pork chops, chicken, or fish.
