   2                    eggs
   1      Tbsp          butter
     1/4  tsp           dry mustard
     1/4  tsp           curry powder
     1/2  tsp           Tarragon vinegar
                        salt
                        pepper
                        mayonnaise
   1      large         sandwich bun
                        or
   2      slices        bread
Melt the butter over medium-low heat.  Blend in the mustard and curry 
powder.
Fry the eggs in the butter, breaking them and muddling them together.  
When the eggs are about half cooked, sprinkle the vinegar over them and 
salt and pepper to taste.  Push them into the approximate shape of the bun 
or bread in which they are to be eaten.  Turn the eggs and allow the omlet 
to become just well enough integrated to be transferred to the bread.  
The bread should be spread generously with mayonnaise.

NOTES : Will Jones was a food writer for the Minneapolis Tribune, and I 
would imagine that he is no longer with us.  This cookbook was published in 
1961, and attitudes toward food, eating, nutrition, and health were very 
different then than they are now.  Using current guidelines, anyone who 
wants can easily cut most of the fat and cholesterol out of this recipe.
