   4      cups          chicken broth
   1 1/2  cups          water
     1/2  cup           sweet sauterne wine
   2                    boneless skinless chicken breasts 
                         -- in bite size pieces
   1      pound         medium-large shrimp -- peeled and deveined
     1/2                firm white fish -- like cod or bass,
                          cut into bites
   8                    green onions -- trimmed, but left
   1      long          and whole (8 to 12)
   2      small         turnips -- peeled and sliced
                          into 1/16" rounds
   1      medium        sweet potato -- peeled, sliced into
                          1/16" rounds  
   1      sprig         watercress
     1/2  pound         tofu -- cut in bite-sized pieces        
                        Hot cooked rice (about 3 cups for 6 people)
Combine the broth, water and sauterne in a wok and bring to a simmer (not 
quite a boil) on a portable burner in the center of the table. Place cooked 
rice and dipping sauce in individual serving bowls at each table place. 
Arrange all the foods on platters on the table.  
Each guest will choose what they want to eat, and place it in the hot 
liquid.  It will cook through in about 2 minutes. They then can place it on 
their rice or dip it into the dipping sauce to eat.
Makes 6 servings.
