   1      tablespoon    olive oil
   1      medium        eggplant -- (1 lb) peeled & cut
                        into 1/2" cubes
   2      large         leeks -- sliced (white part only)   
   1      cup           chopped green bell pepper
   3      cloves        garlic -- crushed
   3      cups          sliced mushrooms
   1      15 oz can     tomato sauce
   1      16 oz can     white beans (cannellini) -- rinsed and drained
     1/4  cup           water
     1/4  cup           sherry
   1      teaspoon      white vinegar
   1      teaspoon      dried oregano
     1/4  teaspoon      dried thyme
   1                    bay leaf
                        salt & pepper to taste
Heat oil in a large nonstick skillet over medium heat.  Add 
eggplant, leeks, bell pepper, and garlic.  Cook, stirring frequently, 
10 minutes.  Add mushrooms.  Continue to cook, stirring frequently, 5 
minutes.
Add remaining ingredients, mixing well.  When mixture boils, cover
skillet, reduce heat to medium-low, and simmer 20 minutes.  Remove and 
discard bay leaf before serving.

   1      Package       (12 oz.) Vanilla Wafers
   1      Package       (16 oz.) Powdered Sugar -- Sifted
     1/2  Cup           Butter -- Softened
   1      Can           (6 oz.) Concentrated Frozen Orange Juice
                        Thawed, Undiluted
   1      Cup           Finely Chopped Pecans
                        Flaked Coconut -- Optional
Crush vanilla wafers to make fine crumbs. Add sugar, butter, and orange
juice concentrate, mixing well.  Shape dough into 1 inch balls. Roll 
balls in pecans or coconut, if desired; chill until firm.

  16      ounces        orange roughy fillet
   8      ounces        mild picante sauce
     1/4  cup           chopped onion
     1/4  cup           chopped green pepper
     1/4  cup           sliced mushrooms
     1/4  cup           grated cheddar cheese
Place fish in microwave-safe dish. Cover with picante sauce, and 
sprinkle with onion, green pepper, and mushrooms. Cover with cheese. 
Place plastic wrap over dish and vent. Microwave on high for 4 minutes 
or until fish flakes easily with fork. Divide fish into 4 equal 
portions. To prepare in conventional oven, bake at 400 degrees for 15 
minutes. 
Serving size: 4 oz
Exchanges: All dinner menus this week have about 550 calories total 
and include:  2-3 Starch servings, 1-3 Meat or Meat Substitute 
servings, 1-3 Vegetable servings, 1 Fruit serving, 1-2 Fat servings.
Total Fat -- 20g Total Carbohydrate -- 45g Protein -- 33g.  Some 
menus have 1 Skim Milk serving instead of 1 Meat, 1 Starch, or 1 Fruit
serving.
Dinner: 1 serving Orange Roughy Picante, 1 cup cooked Spanish rice,
1/2 cup green beans 1 slice whole-wheat bread 1&1/4 cups 
watermelon, cubed.

     1/2  Cup           Parmesan Cheese -- Grated
   2      Teaspoons     Dried Whole Oregano
   2      Large         Baking Potatoes -- Unpeeled
   1                    Egg White -- Beaten
                        Vegetable Cooking Spray
Combine Parmesan cheese and oregano; set aside.
Cut each potato lengthwise into 8 wedges; dip into egg white, and 
dredge in Parmesan cheese mixture. Place fries on a baking sheet 
coated with vegetable cooking spray. Bake at 425 degrees for 25 
minutes.

   6      Quarts        Freshly Popped Corn -- About 1 cup unpopped
   1      Cup           Dry Roasted Peanuts
   1      Cup           Pecan Halves or Pieces
   1      Cup           Butter
   1      Cup           Firmly Packed Brown Sugar
   1      Cup           Sugar
     1/2  Cup           Light Corn Syrup
   1      Teaspoon      Salt
     1/2  Teaspoon      Baking Soda
Combine popped corn, peanuts, and pecans in a large roasting pan.
Melt butter in a large saucepan; stir in sugars, corn syrup, and salt.
Bring to a boil; boil 5 minutes stirring often (temperature will be
about 244 degrees). Remove from heat; stir in soda.
Pour sugar mixture over popped corn and nuts; stir well. Bake at 250
degrees for 45 minutes, stirring every 15 minutes. Cool. Store in an
airtight container.
