Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
  2 teaspoons olive oil
  3 cloves garlic -- minced
1 red delicious apple -- peeled, cored,
and chopped into 1/2" diced pieces
  2 teaspoons sugar
  2 cups dry white wine
  2 flounder filets
     1/4 teaspoon thyme
     1/4 teaspoon tarragon
In a skillet over medium-high heat, sauté the garlic in the oil.
When it has begun to slightly brown, add the apples and the sugar.
Stir to blend and melt the sugar. Add the wine.
When the wine has come to a simmer, place the fish in the pan. Poach
the fish until you see the white along the edges of the fish. Then,
flip the fillet over in the pan. Continue to cook until the fish
begins to flake.
Serve with the sauce spooned over the fish.
