  1 1/2           cups  onion -- finely chopped
  2        tablespoons  garlic -- finely chopped
     1/2           cup  celery -- finely chopped
  1              pound  chorizo -- sliced
  1              pound  smoked ham -- cut into 1/2" cubes
  1                can  tomatoes -- drained and chopped
                        with all the liquid
  3        tablespoons  tomato paste
  1         tablespoon  fresh parsley
  3                     whole         cloves -- pulverized
     1/2      teaspoon  dried thyme
     1/2      teaspoon  cayenne pepper
     1/4      teaspoon  black pepper
  2             pounds  medium shrimp -- cooked
                        Cooked rice
Saute vegetables until soft, but not browned.  Add chorizo and smoked 
ham. Stir in remaining ingredients (except shrimp).  Cook until 
thickened, and just before serving stir in shrimp.  Serve over rice.

                      Smoked Gouda and Onion Quiche

  1         Tablespoon  Butter
     1/2        medium  Onion -- diced
  1                     Deep-dish pie shell (frozen)
     3/4           cup  Smoked Gouda cheese -- grated
  4                     Eggs
  1 1/2           cups  Half and Half
  1 1/2       teaspoon  Parsley -- chopped
  1               Dash  White pepper
     1/8      teaspoon  Salt
Pre-heat oven to 375. Melt the butter in a small skillet. Add the onions 
and cook until just soft. Set aside. Bake the empty pie shell for 5 
minutes. Remove from the oven and place it on a cookie sheet. Place the 
cheese in the bottom of the warm shell. In a mixing bowl, lightly beat 
the eggs.
Whisk in the half and half, parsley, onions, and seasonings. Pour into 
the shell.
Bake for 25-35 minutes, or until the pie is firm. Serve warm or chilled.

                Southern Style Pork Loin Chops With Gravy

  4                     Pork loin chops -- (8 ounce) boneless
  1 1/2           cups  Flour
  2          teaspoons  Pepper
     1/2      teaspoon  Salt
  2        Tablespoons  Oil
     2/3           cup  Milk
     1/4           cup  Beef broth
     1/4           cup  Chicken broth
Preheat the oven to 300. Mix together the flour, salt, and pepper. Heat 
the oil in a heavy skillet. Dredge the pork in the seasoned flour. Place 
in the skillet until well browned, turning once. Place in an oven ready 
pan and put in the oven. Sprinkle 2 Tablespoons of the flour into the 
skillet.
Whisk well and cook three minutes. Slowly whisk in the broths and milk. 
Reduce the heat to low and simmer 20 minutes, stirring frequently. Remove 
the pork and top with the gravy.

NOTES : Placing the pork in a moderate oven after browning makes them 
very tender.
