  6 1/2         ounces  Tuna -- drained
  1                cup  Sharp Am. Cheese -- shredded
  3             ounces  Cream cheese -- cut up
     1/4           cup  Green onions -- sliced
  2             ounces  Pimiento; chopped -- drained
  2               cups  Milk
  1                cup  Bisquick
  4                     Eggs
     3/4      teaspoon  Salt
  1               dash  Nutmeg
Heat oven to 400.  Grease pie plate, 10 x 1 1/2".
Mix tuna, cheeses, onions and pimiento in plate.  Beat remaining 
ingredients 15 seconds in blender on high or 1 minute with hand beater. 
Pour into plate.
Bake until knife inserted between center and edge comes out clean, 
35-40 minutes. Cool 5 minutes.
Serve with sliced tomatoes. Serves 6-8.

  1 1/2         pounds  chicken
  4             quarts  water
  1              small  onion -- finely chopped
  1                cup  chopped celery
  80                    marble-sized meatballs
                        [see recipe below]
     1/2           bag  fresh spinach
  2                     eggs
  1         tablespoon  grated Parmesan cheese -- fresh
                        MEATBALLS
  1              pound  ground meat
  1             medium  onion--chop fine
  1              small  carrot--chop fine
  1 1/2           cups  bread crumbs (give or take)
     1/2           cup  Parmesan Cheese
  3                     eggs
                        salt and pepper to taste
                        touch of olive oil
  1              pinch  oregano
     1/4      teaspoon  crushed garlic
Boil chicken with water, celery, and onion for 2 hours.  Remove chicken 
from bones; add meatballs and chicken to broth and simmer 10 minutes.
Beat eggs and add grated cheese; pour into soup and stir.
Meatballs :  Mix eggs and meat.  Add other ingredients. Mix gently with 
hands, being careful not to over mix (this will make the meatballs 
tough). Roll using oil on hands.  Brown in 1/4" oil in skillet.
