  2        tablespoons  oil
  4             cloves  garlic -- finely chopped
  1         tablespoon  red curry paste
  8        tablespoons  coconut milk
  1                cup  broth -- your choice
  1         tablespoon  sugar
  4        tablespoons  soy sauce
  1         tablespoon  lemon juice
  4        tablespoons  peanut butter
Heat oil.  Add garlic and fry until golden brown.  Add curry paste and 
mix the two well together.  Add the coconut milk.  Add broth, soy sauce 
sugar, and lemon juice.  Stir well.
Cook for a minute constantly stirring.  Add the peanut butter.  Stir 
until blended.
Description: "A nice little sauce you can use on your favorite 
vegetables, meats, fish, or rice."
July 18, 2001:  Served with grilled salmon fillets and basmati rice.

                           Tomato & Peanut Soup

  2        tablespoons  olive oil
  1                cup  chopped onions
  1                cup  chopped green pepper
     1/2    tablespoon  whole-wheat flour
  1                cup  2% low-fat milk
  1                cup  peanut butter
  1                cup  fresh tomato pulp -- or canned
  2               cups  tomato juice
                        Salt & cayenne pepper -- to taste
Heat the oil in a pot, saute the onions and green peppers for 5 minutes. 
Stir in the flour and when smooth, add milk and peanut butter. Continue 
to cook over medium heat, stirring constantly until the soup is smooth, 
hot and thick (about 5 to 10 minutes). Slowly stir in the tomato pulp and 
tomato juice and cook until it is warm.
From Charity Cookbook Volume I; put out by the Canadian Progress Club 
sometime in the 1990's.
According to the introduction the recipes were contributed to the book by 
Silvia Perry and Bozenka Stefulic of the Soup Kitchen Restaurant in 
Banff, Alberta.

                         Turkey Burgers and Bacon

  1 1/2         Pounds  ground turkey
  3        Tablespoons  sweet onion -- finely chopped
  2                     garlic cloves -- freshly minced
     1/4      Teaspoon  black pepper -- freshly ground
  1                Cup  Cheddar cheese -- shredded
     1/2           Cup  button mushrooms -- sliced thin
  6             Slices  turkey bacon -- crisply cooked
                        and crumbled
  1                     green onion -- finely chopped
     1/4           cup  mayonnaise
In a bowl, combine ground turkey, sweet onion, garlic and pepper; mix 
well. Shape into 6 patties.
In a small bowl, combine cheese, mushrooms, cooked bacon, green onion and 
mayonnaise; mix well.
Broil or grill burgers 4-6 inches from the flame, over medium temperature 
or coals for about 10-12 minutes, turning once.
During the last several minutes of cooking, spoon 1/4 cup cheese topping 
on each burger. Continue cooking until the cheese is melted.
Notes :
I think I would add a little oats to this recipe.
