                      Impossible Crockpot Apple Pie

Serving Size : 8 Preparation Time :0:00
Categories : Volume 5-02 Feb. 2002
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
  8 tart apples -- peeled & sliced
  1 1/4 tsp cinnamon
     1/4 tsp allspice
     1/4 tsp nutmeg
     3/4 cup milk
  2 Tbsp. butter -- softened
     3/4 cup sugar
  2 eggs
  1 tsp vanilla
  1 1/2 cups Bisquick -- divided
     1/3 cup brown sugar
  3 Tbsp cold butter
Combine apples -- cinnamon, allspice, and nutmeg in crockpot. Toss
thoroughly.
Combine milk soften butter, sugar, eggs, vanilla, and 1/2 cup
Bisquick. Spoon over apples.
Combine the remaining 1 cup Bisquick and brown sugar. Cut cold
butter into mixture until crumbly. Sprinkle this mixture over top of
apple mixture.
Cover and cook on LOW for 6-7 hours until apples are soft.
NOTES : I used the Reduced Fat Bisquick without any problems. Can be
served hot, warm or cold...could be warmed up in the microwave.
I took this to a pot luck last night; and it was the hit of the
party. It was originally posted on the "slowcooker" list by Jana
Church and then recommended again by Amanda O'Donnell on the same
group. This is a definite keeper.
I will be going to another potluck the end of February, and you can
bet this one will be going with me.

                        Italian Oven-Fried Chicken
Recipe By :A Cook's Tour of Shreveport (LA)
Serving Size : 8 Preparation Time :0:00
Categories : Volume 5-02 Feb. 2002
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
  1 cup Corn flake crumbs
     1/4 teaspoon garlic powder
     1/4 teaspoon salt
     1/4 teaspoon paprika
     1/4 teaspoon oregano
     1/4 teaspoon basil
     1/4 teaspoon red pepper
1/4 cup grated Parmesan cheese -- * see note
  1 egg white
  1 teaspoon water
8 boneless skinless chicken breast halves
Heat oven to 450 F. Line a baking pan with foil and spray with non-
stick spray.
In a small bowl combine cornflake crumbs, spices and cheese; mix
well.
In another bowl, beat egg whites and water until frothy. Using a
fork, dip chicken, one piece at a time into egg and water mixture.
Drip off excess into bowl. Place on greased baking pan and sprinkle
with crumb mixture.
Bake for 15-20 minutes or until chicken is tender and juice runs
clear.
* Note: the amount of cheese was lost from this recipe. I am
estimating, based on other similar recipes.
Bobbie's Note: This was moist and very flavorful. A real winner.
