                     Hearty New England Clam Chowder

  13            ounces  minced clams
                        [two 6 1/2-ounce cans]
  1                cup  onions -- finely chopped
  1                cup  celery -- chopped
  2               cups  potatoes -- pared and diced
                        Water
  1 1/2           cups  WHITE SAUCE MIX  (See Below)
  1              quart  milk
     1/2      teaspoon  sugar
                        Salt and pepper -- to taste

Drain clams, reserving juice.
In a large saucepan, combine clam juice, onions, celery and potatoes.
Add enough water to just cover vegetables.
Cook over medium heat about 15 minutes or until tender.
While vegetables are cooking, combine WHITE SAUCE MIX  and milk in a
large kettle or Dutch oven.
Cook over low heat until thick and smooth, stirring constantly.
Add clams, undrained vegetables and sugar.
Heat through about 15 minutes.
Add salt and pepper to taste.

WHITE SAUCE MIX:

    2      cups          instant nonfat dry milk
                         OR 1 1/2 cups regular nonfat dry milk
    1      cup           all-purpose flour
    2      teaspoons     salt
    1      cup           butter or margarine

In a large bowl, combine dry milk, flour and salt. Mix well.

Using a pastry blender, cut in butter or margarine until mixture
resembles fine crumbs.

Lightly pack in a large, airtight container. Label.
Store in refrigerator.

Use within 2 months.

Makes 1 quart.

                           Homemade White Bread

  2        tablespoons  active dry yeast
  1                cup  lukewarm water
  2                     eggs -- beaten
  1                cup  water
  4        tablespoons  vegetable oil
  6 1/2           cups  HOT ROLL MIX--(6 1/2 to 7 cups) (See
                        Below)
                        Butter or margarine

In a large bowl, dissolve yeast in lukewarm water.
When yeast starts to bubble, add eggs, water and oil.
Blend well.

Add HOT ROLL MIX, 1 cup at a time, until dough is stiff.

On a lightly floured surface, knead dough 5 to 7 minutes, until
smooth and satiny.

Lightly butter a bowl.
Put dough in bowl and turn to butter top.
Cover with a damp towel and  let rise in a warm place until 
doubled in bulk, about 45 to 60 minutes.
Punch down dough. Let stand 10 minutes.

Shape into two loaves.

Grease two 9 x 5-inch loaf pans.
Place 1 loaf in each pan, seam-side down.
Cover and let rise again until slightly rounded above top of pan,
about 30 to 40 minutes.

Preheat oven to 375°F. (190°C).
Bake 45 to 55 minutes until deep golden brown.
Remove from oven and brush tops with butter or margarine.
Remove from pans and cool on a wire rack.

Makes 2 loaves.

Variation :  Raisin Bread:  Add 1 cup raisins with HOT ROLL MIX.
Toast Bread, if desired.

HOT ROLL MIX

5      pounds        all-purpose flour
1 1/4  cups          sugar
4      teaspoons     salt
1      cup           instant nonfat dry milk

Combine all ingredients in a large bowl.
Stir together to distribute evenly.
Put in a large, airtight container.
Label.
Store in a cool, dry place.

Use with 6 to 8 months.

Makes about 22 cups HOT ROLL MIX.
