                       Hungarian Goat Cheese Recipe

                        Goat milk
                        Yoghurt
                        Salt

Heat the freshly milked or stored on 4 C° goat milk to 32-33 C°. Add the
yoghurt to the heated milk, then sprinkle inoculators in it. Mix it
thoroughly. Keep the milk on 32-33 C° for 40 minutes. When it is getting
hard, cut it. Keep cutting until the mixture comes apart in very small,
grain like pieces. Heat the mixture to 40-42 C° while constantly stirring
it. Continue stirring it on this temperature for 30-50 minutes. Place it in
a clean tablecloth. Save the whey in a clean bowl. Lay the tablecloth with
the mixture in it on a table. Sprinkle with salt. Mix it thoroughly (you
can add different spices now). Tie the tablecloth again and hang it for 12-
16 hours in a room with 22-24 C° temperature.
