                               Oatmeal Cake

  1 1/2           cups  boiling water
  1                cup  oatmeal
  1                cup  white sugar
  1                cup  brown sugar
     1/2           cup  shortening
  2                     eggs -- well beaten
  1 1/2           cups  flour
  1 1/2      teaspoons  baking powder
  1           teaspoon  salt
  1           teaspoon  cinnamon
  1           teaspoon  vanilla
                        **Topping**
  6        tablespoons  butter
     1/4           cup  evaporated milk
     1/2           cup  brown sugar
  1           teaspoon  vanilla
  1                cup  coconut
  1                cup  chopped nuts

Pour water over oatmeal and let stand 30 minutes.

Cream together sugars, shortening and eggs.
Add the oatmeal.
Blend in flour, soda, baking powder, salt, cinnamon and vanilla.

Bake in 9 x 13-inch pan for 35 minutes in 350F. oven. (Or in 2 8-inch
layer cake pans, greased and lined with waxed or parchment paper)

**Topping**

Cook butter, milk, sugar together for 3 minutes. Stir in vanilla,
coconut and nuts. Spread hot on hot cake.

(I always double the recipe if I am making a layer cake).

     1/2           cup  granulated sugar -- (125 mL)
     1/2           cup  brown sugar -- (125 mL)
  1                     egg -- beaten
  1         tablespoon  water -- (15 mL)
     1/2      teaspoon  vanilla -- (2 mL)
     1/2      teaspoon  soda -- (2 mL)
     1/2      teaspoon  salt -- (2 mL)
  1 1/2           cups  oatmeal -- (375 mL)
  1                cup  Spanish peanuts -- (250 mL)
                        or 1 1/4 cups chocolate chips -- (300 mL)
                        or part of each
     3/4           cup  sifted flour

Cream the shortening and sugar together well.  Stir in the egg, water and 
vanilla.  Add sifted dry ingredients, rolled oats and peanuts or chips.

Drop from a teaspoon onto a greased baking sheet.

Bake in a moderate (375F./190C.) oven for 10 to 15 minutes.

If brown sugar is not available granulated sugar may be used.

                     Old-Fashioned Coriander Cookies

     1/2           cup  shortening -- (125 mL)
     1/2      teaspoon  salt -- (2 mL)
     1/4      teaspoon  soda -- (1 mL)
  5          teaspoons  ground coriander seed -- (25 mL)
  1                cup  sugar -- (250 mL)
  1              large  egg
  2               cups  sifted all purpose flour -- (500 mL)
     1/2           cup  buttermilk -- (125 mL)
                        or sour milk

Cream the first four ingredients together. Gradually blend in the sugar.

Beat in the egg. Add the flour alternately with the milk, blending well.

Drop the dough from a teaspoon onto lightly-greased cookie sheets, about 2
inches (5 cm) apart, keeping them round.

Bake in a preheated moderate oven (375F/190C) for 15 minutes or until
lightly browned around the edges.

Cool on wire racks.  Store in airtight containers.

Makes about 3 dozen cookies.
