                         Adaptable Crockpot Cake

  1                box  cake mix -- any brand any flavor
  1          small box  instant pudding -- use the same flavor
                        as the cake
  12            ounces  sour cream
  4                     eggs
     3/4          cups  oil
  1                cup  water

Spray inside of crackpot with nonstick cooking spray. Mix all ingredients
together and pour in crockpot. Cook on low for about 6 hours. Turn crockpot
off and let sit for about 1 to 2 hours. Then you can flip it out onto a
plate. If you do not let it cool long enough before taking it out of the
crockpot half of it stays in the crock.

                        Apple-Brie Cheese Omelet

     1/2                apple -- peel,
                        core and thinly slice
  2 1/2    tablespoons  butter -- divided
  2                     eggs
  2          teaspoons  cream -- or milk
                        Salt and pepper
  2        tablespoons  diced brie cheese

Saute 1/2 apple in 1 tablespoon butter.

Beat together two eggs, 2 teaspoons cream or milk, salt and pepper until
blended but not frothy.

Melt 1 1/2 tablespoons butter in omelet pan over high heat until foam
begins to recede but before beginning to color.

Pour in egg mixture and prepare omelet, beating to lighten but still
allowing it to set on the bottom.

Fill with sautéed apples and 2 tablespoons diced Brie cheese cubes.

Fold or roll and slide out of pan onto a heated plate.

                             Asian Meatballs

     1/2         pound  ground turkey
  4                     scallions -- sliced 1/4-inch
  1                     garlic clove -- minced
  1         tablespoon  fresh ginger -- grated
  1           teaspoon  toasted sesame oil
  1           teaspoon  fish sauce
  2        tablespoons  soy sauce
  1         tablespoon  rice vinegar
  1           teaspoon  chili flakes
  6                     Shiitake mushrooms -- sliced and sautéed
  1                     celery rib -- very finely chopped
  1                     carrot -- very finely chopped

Combine all the ingredients in a mixing bowl and mix together well.

Shape the meat into little meatballs, rolling about one tablespoon of the
mixture between your hands.

Bake or sauté the meatballs until cooked through.

Try not to overcook or they will be dry.

Serve with your favorite Asian dipping sauce or some store-bought chili
garlic sauce.
