          Lemon Macadamia Shortbread in da Microwave - Hawaiian

  1 1/4             c.  flour
     1/4            c.  sugar
     1/8          tsp.  salt
  2               tsp.  grated lemon peel
     1/2            c.  butter
     1/2                chopped macadamia nuts

Stir together the flour, sugar, salt and lemon peel. Cut in the butter with a
pastry blender or 2 knives .. until the mixture resembles coarse cornmeal. Stir
in macadamia nuts. Form mixture into a firm ball with your hands. Place in a
9-inch glass dish and press into an even layer. Cut dough in wedges.

Place in microwave oven and cook 4 minutes, rotating the dish a quarter turn
after each minute.

Remove from microwave oven and cut shortbread into wedges again, retracing
first marks. Allow to cool. Broke da mouth, dis one!! Get cold Milk ready !!

                             Lemon Pound Cake

  8             ounces  cream cheese -- softened
     3/4           cup  milk
  18 1/4        ounces  lemon cake mix -- (1 package)
  4                     eggs

In a mixing bowl, beat cream cheese until smooth; gradually beat in milk.
Add dry cake mix and eggs; beat until combined. Beat on Medium speed for 2
minutes. Pour into a greased and floured 10-inch fluted tube pan.

Bake at 350 F. for 40-45 minutes or until a toothpick inserted near the
center comes out clean. Cool for 10 minutes before removing from pan to a
wire rack to cool completely.

Yields 12 servings.

Diabetic Exchanges: 2 starch, 1 fat, 1/2 fruit

NOTES : Flora shares her recipe for moist lemon Bundt cake. She dresses up a
boxed mix with a package of cream cheese to give the cake added richness.

Bobbie's Note: Very good. Served it with strawberries and whipped topping.
I made this in my stoneware Bundt pan and only needed the minimum time.
With stoneware, do not flour, only spray with nonfat butter spray.

                         Lickin' Good Beef Steak

  2             pounds  round steak
  3        tablespoons  oil
  4                     lemon slices
  3             medium  sliced onions
  2             cloves  minced garlic
     1/2           cup  flour
  1                can  beef bouillon
  1                can  beer
  3        tablespoons  brown sugar
  1         tablespoon  parsley flakes
  2          teaspoons  thyme
                        salt and pepper to taste
  8             ounces  cooked broad noodles or
  2               cups  cooked rice
                        Garnish:
                        Green pepper slices
                        Fresh parsley
                        Cherry tomatoes

Cut steak into serving size pieces. Brown on both sides in 3 tablespoons
oil to which you have added lemon slices. Remove steak to pan large enough
in which to bake it. Layer onions and garlic over meat. Sprinkle flour over
top.

Now combine bouillon, beer, sugar, parsley flakes, thyme, salt and pepper.
Pour over steak and bake uncovered in 325 degree F. oven for 3 hours.

Serve over cooked broad noodles or cooked rice. Garnish with green pepper
slices, fresh parsley and cherry tomatoes.

Serves 5 - 6.

NOTES : Bobbie's Note: This was sooo good and a little different from any
other round steak recipe I have made. I did have to add a little water to
the dish before this was done. I served it with broad noodles and fresh
green beans.
