                       Very Easy Baked Chicken Dish

  Amount  Measure       Ingredient -- Preparation Method
--------  ------------  --------------------------------
                        breast of chicken
                        or smaller fillet pieces -- cut or pounded out
     1/2           cup  grated cheese blend -- (1/2 cup to 1 cup)
                        [I used Monterey Jack and cheddar]
                        amount depends on how many
  1             pieces  chicken to process
     1/4           cup  finely chopped scallion
                        Few tablespoons flour
                        Seasoned salt and white pepper
  1                cup  milk
     1/4           cup  yellow style mustard

Blend the milk and mustard, adding more mustard to make a tangy sauce if
desired.

Blend the grated cheeses with the flour, scallions and seasonings in
another bowl.

Dip the chicken breasts in the liquid then in the cheese mix.

Lay on cookie sheet and pat the remaining cheese mix over the top.

Bake at 325F. for about 35 minutes.

Substitute skim milk and low fat cheeses to make this a low cal dinner
item.
