                            Mango and Coconut Smoothie

2 large ripe mangoes
1 tablespoon powdered sugar -- (15 mL)
2 1/4 cups coconut milk -- (550 mL)
[approximately 1 1/2 398-mL cans]
5 ice cubes
Shredded toasted coconut for garnish

Cut the mangoes in half and remove the pit. Cut away the peel and coarsely
chop the flesh.

Place the chopped mango in a blender or food processor; add the powdered
sugar and blend until completely smooth.

Add the coconut milk and ice to the machine and blend again until frothy.

Pour into 4 tall glasses and sprinkle with shredded, toasted coconut.

Serves 4.

Cook's tip: To add a special kick to the cocktail (though not perhaps, for
breakfast) add a generous dash of white rum to the blender with the
coconut milk.

Variation - If you don't have shredded toasted coconut, sprinkle with
ground ginger just before serving.

                         Martha's 'Guilt-Free' Pork Chops

Amount Measure Ingredient -- Preparation Method

Boneless pork chops -- (fairly thick)
Salt
Seasoning -- to taste
Ground flaxseed

Choose fairly thick boneless chops, season with whatever you prefer, salt
plus other 'essentials'.

Pat ground FLAXSEED over the chops and sear in a little hot oil. Lower the
heat, let the crust set and depending on thickness, chops should be done in
well under 20 minutes.

Actually, I like the flax so much, I just keep a 'rub' with my usual
seasonings, paprika, garlic powder, salt, lots of hot things blended in
with flax and I use this to sprinkle over lots of meats and it's also great
over sliced sweet onions before they're pan fried or grilled, too.

                               Melting Moments

1 cup butter
3/4 cup icing sugar
1 cup flour
1 cup cornstarch
1/2 teaspoon baking powder
Butter icing or raspberry jam
Butter Icing:
1/2 cup butter -- softened
1/4 teaspoon vanilla
2 cups icing sugar -- sifted
1 tablespoon hot water -- (1 to 2)

Cream butter and sugar till light and fluffy. Stir flour, cornstarch and
baking powder together. Mix into creamed mixture, mixing well. Roll dough
into small balls the size of large marbles and place on greased oven tray.
Flatten slightly with a fork. Bake at 350F. for 20 minutes or until done.
Cool and sandwich two cookies together with butter icing or raspberry jam.

Butter Icing

Cream butter till light and fluffy. Add vanilla. Gradually beat in icing
sugar, beating till smooth. Add sufficient water to give a spreading
consistency.

Makes 16.

                                  Microwave Potato Chips

Amount Measure Ingredient -- Preparation Method

1 tablespoon vegetable oil
1 potato -- sliced paper thin [peeling optional]
1/2 teaspoon salt - or to taste

Pour vegetable oil into a plastic bag. Add potato slices and shake to coat.

Coat dinner plate (microwavable) lightly with oil or cooking spray.

Arrange potato slices in single layer on dish. Microwave for 3 - 5 minutes
or until lightly browned. If not browned potatoes will not become crisp.
(Times will vary as to the power of your microwave.)

Remove chips and toss with salt or other seasonings. Let cool.

Repeat with remaining potato slices. You will not need to re-oil plate

Notes : Can use parchment paper with no oil necessary. Can brush each
slice with oil rather than using plastic bag. Each succeeding batch may
take longer to cook, which might be due to extra steam buildup in
microwave.
