                                 Iced Coffee

Amount Measure Ingredient -- Preparation Method

6 tablespoons ground coffee
3 cups cold water
Coffee Ice Cubes or ice cubes
Milk and sugar to taste -- optional

Prepare the coffee with the cold water in a coffee maker. Refrigerate until
ready to serve.

Pour the coffee over the ice cubes in tall glasses. Serve with milk and
sugar if desired.

For Coffee Ice Cubes: Pour cooled, brewed coffee into ice cube trays.
Freeze until solid. Use to chill coffee beverages without diluting the
flavor.

                              Iced Mocha Frappuccino

6 cups double-strength freshly brewed dark roast coffee
2/3 cup unsweetened cocoa powder
plus additional cocoa powder for garnish
2 cups nonfat milk

Fill ice-cube trays with half of the brewed coffee and place in the
freezer.

In a bowl, combine the remaining brewed coffee, cocoa powder and milk; stir
to dissolve the cocoa. Cover and chill.

When the ice cubes have frozen, transfer them to a kitchen towel and, using
a hammer or mallet, crush the cubes.

Fill 4 glasses with the crushed ice and divide the coffee-cocoa mixture
evenly among them. Dust the top with cocoa powder and serve.

Serves 4.

                                      Iced Tea Base

6 tea bags
3 cups water

I take a Mason jar (one that comes with Classico brand tomato sauces is
ideal) and boil about three cups of water in the microwave. Be careful
with the water when you remove because it can easily explode. To this I
add about six tea bags (and I only use Canadian tea bags because they make
superior tea). Seal the jar and put away until you need to make tea.
This will make about two quarts of iced tea - or you can spoon out and
make it by the glass if you prefer. I don't like sweetened tea, but you
can easily add sugar at the same time you add the tea bags and it will be
ready to go - instant brewed iced tea.

microwave it and again once or twice during the heating, it won't have
that tendency to 'explode'. H.
