4 eggs
1 1/2 cups Chelsea White Sugar
100 grams butter -- cut into
little pieces -- (about 1/4 pound)
2 lemons -- grated rind and juice

Place the eggs and sugar in a large microwave proof bowl or jug. Whisk with
a wire whisk until well combined. Add the butter, lemon juice and rind.
Cook on high for 8 ­ 10 minutes, stirring every minute until the mixture is
smooth, thick and creamy. Cool for 5 minutes then pour into warm clean
jars. Seal when cold and store in the fridge.

Perfect on toast, ice cream or serve with lemon cakes or in tarts.

Preparation time: 10 minutes
Cooking time: 10 minutes

Makes 2 cups.

---> This used to be a special treat when I was a kid here in Canada too.
We called it Lemon Cheese for some reason which still escapes me. Very
yummy stuff to spread on toast indeed! Say, I wonder what it would be
like as a filling for cream puffs? hmmmmmmmmm H.

                              Leprechaun Lime Drink

1 quart lime sherbet -- softened
1/2 cup limeade concentrate
2 tablespoons sugar
2 12 ounce cans lemon-lime soda -- chilled
1 cups crushed ice -- (1 to 2)

In a mixing bowl, blend sherbet, limeade and sugar. Stir in soda and ice.
Pour into glasses.

Nutritional Analysis: One 1-cup serving (prepared with sugar-free sherbet
and diet soda) equals 209 calories, 62 mg sodium, 6 mg cholesterol, 49 gm
carbohydrate, 1 gm protein, 2 gm fat. Diabetic Exchanges: 3 fruit, 1/2 fat.
