                                   Ornish Meatloaf

Amount Measure Ingredient -- Preparation Method

1 1/2 pounds ground Boca burger -- see note *
2 ounces ground soy sausage
1/4 cup egg substitute
1/3 cup skim milk
2 tablespoons diced fresh onions
2 tablespoons diced fresh green peppers
2 1/2 teaspoons chopped garlic
1/2 cup bread crumbs
1 teaspoon black pepper
1 teaspoon salt
1/2 cup ketchup
2 1/2 teaspoons brown sugar

*Note: [This is a ground meat substitute found in the freezer section of
your grocery store. Works just like hamburger. Any other kind may be used.]

Combine first 9 ingredients and mix well in large bowl. Shape into loaf and
place in pan. Bake at 350 degrees F. for 1 hour. Combine ketchup and brown
sugar and pour over meatloaf. Bake uncovered 15 minutes. Slice into ten
slices.

Yield : 10 servings
