                         Rolled Ginger Cookies

Recipe By : Company's Coming - Cookies; Jean Pare
Serving Size : 24 Preparation Time :0:00
Categories : Volume 9-01 Jan 2006

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/4 cup butter or margarine -- softened (60 mL)
1/2 cup granulated sugar -- (125 mL)
1/2 cup molasses -- (125 mL)
1/3 cup water -- (75 mL)
3 1/4 cups all-purpose flour -- (750 mL)
1 teaspoon baking soda -- (5 mL)
1 teaspoon ground ginger -- (5 mL)
1/2 teaspoon ground cinnamon -- (2 mL)
1/4 teaspoon ground cloves -- (1 mL)
1/2 teaspoon salt -- (2 mL)
Glaze and decorate as desired

Preheat oven to 350F (180C). Grease cookie sheet(s).

In a large mixing bowl, cream butter and sugar together. Add molasses and
water. Mix in remaining ingredients.

Roll out on lightly floured board. Cut dough into shapes of gingerbread men
or any other shapes you like.

If you want to be able to hang them use a drinking straw to make a hole
1/2-inch from the top edge.

To make lollipops, take 1/3-cup (75 mL) of dough and roll it into a ball;
insert a small wooden stick. Arrange on prepared cookie sheet and press
with the bottom of a glass to 1/4-inch (6 mm) thickness.

Bake for 8 to 10 minutes; thicker cookies may take a bit longer.

Makes about 24 men and circle shapes.

Glazing and decorating: brush the tops with warm corn syrup and apply
decorations as desired.

Author's comment: A super dough that makes sturdy men, lollipops and
hanging ornaments. The glaze stays sticky for about 30 minutes to allow for
lots of decorating trials and errors. May also be iced and decorated.
