                    Reece's Style Farina For 1

Amount Measure Ingredient -- Preparation Method

1 cup water
3 tablespoons farina
1/2 tablespoon cocoa
1 1/2 tablespoons brown sugar
1/4 cup skim milk

Bring water to a boil.
Pull 1 tablespoon boiling water and mix with cocoa. (A metal 1/4-cup
measuring cup works well.)
Add farina and then cocoa mix to boiling water and cook 3 minutes,
stirring constantly.
Stir in peanut butter, sugar and milk.

Add a banana for a pretty good breakfast.

I developed this in the 70's for my kids as a quick, cheap,
nutritious alternative to the sweetened flavored cold cereals being
so heavily promoted. It's still a satisfying snack after shoveling
snow.

                          Reuben Sandwich For 1

Russian dressing:
1/4 cup mayonnaise
1/2 tablespoon ketchup
2 drops Worcestershire sauce -- (2 to 3 drops)
1/2 tablespoon parsley -- finely chopped
1 teaspoon grated white onion
1 teaspoon prepared horseradish
or more, according to taste
2 slices rye bread
For the sandwich:
Butter
1/4 pound thinly sliced corned beef
1 cup well-drained sauerkraut
or Cole slaw
2 slices Swiss cheese

Toast slices of bread. Spread butter thinly, top with dressing.
Divide among the slices corned beef, sauerkraut and cheese. Arrange on
a baking sheet and bake in a preheated 400 degree F. oven for 5 to 7
minutes, until cheese is lightly brown, about 1 minute. Cut Reuben in
half on the diagonal. Serve immediately, accompanied with dill or
half-sour pickle optional.

                           Rolled Oats Chocolate Cake

1/2 cup rolled oats
1/2 cup margarine
1/3 cup brown sugar
2 eggs
1 teaspoon vanilla
1 cup flour
1/2 teaspoon salt
2 tablespoons cocoa
1 teaspoon baking power
1 teaspoon baking soda

Mix 1/2 cup rolled oats with 1 cup boiling water. Set aside, let cool.
Cream together margarine and sugar, add eggs, add remaining ingredients
and rolled oats mixture. Blend well. Bake 350 degrees F. for 30 minutes in
8x8-inch pan. Cool, ice with a chocolate icing. This is a very moist and
delicious chocolate cake. Easy.

                      Rosemary Garlic Lamb Chop For 1

2 lamb chops -- loin or shoulder
[about 7 oz or 200 g total]
2 tablespoons red wine vinegar
1 tablespoon extra virgin olive oil
1 tablespoon fresh chopped rosemary
1 large garlic clove -- minced
1 teaspoon Dijon mustard
Salt and pepper to taste
3 mini new potatoes
1 tablespoon unsalted butter
1 tablespoon fresh chopped parsley
Side dish: Spicy Broccoli
1/3 cup water
1 1/2 cup broccoli florets
1 tablespoon extra virgin olive oil
1 pinch hot pepper flakes
Salt and pepper -- to taste

Whisk together vinegar, oil, rosemary, garlic, mustard and a pinch of both
salt and pepper in shallow dish. Add lamb chops and turn to coat. Let
stand at room temperature for 10 minutes.

Cook potatoes in small pot of boiling salted water for about 8 minutes or
until tender. Drain and cut in half.

Melt butter in saucepan and add potatoes, parsley and pinch of salt and
pepper. Toss to coat. Cover and keep warm.

Heat non-stick skillet or grill pan over medium-high heat. Remove lamb
chops from marinade and sear, turning once, for about 10 minutes or until
medium-rare.

Serve lamb chops with potatoes and spicy broccoli.

(LCBO ­ March 2006) ­ For one

Side dish: Spicy Broccoli

Bring water to boil in non-stick skillet. Add broccoli. Cover and cook for
3 minutes or until tender crisp. Drain, if necessary. Add oil to skillet
and cook broccoli, hot pepper flakes, salt and pepper over medium heat,
stirring for 2 minutes or until cooked well and golden.

Serve with lamb chops.
