  Fresh Strawberry "Cheese" Cake

  1 1/2 cups graham cracker crumbs
  1/4 cup soy margarine -- melted
  3 cups firm silken tofu patted dry
  1 cup sugar (or a natural sweetener)
  1/4 cup soy milk
  1 1/2 tablespoons vegetable oil
  1 tablespoon cornstarch
  1 teaspoon vanilla extract
  2 pints strawberries -- washed and hulled
  mint sprigs (optional garnish)

Preheat oven to 350F. Lightly oil a 9-inch springform pan.

Place crumbs and melted margarine in bottom of spring-form pan and blend with a fork to
moisten crumbs. Press crumb mixture into bottom and up sides of pan, and bake for 5
minutes. Set aside.

In a food processor, combine the tofu, sugar, soy milk, oil, cornstarch and vanilla and blend
until smooth.

Pour filling into prepared crust and bake for 30 minutes or until firm. Remove from oven
and allow to cool.

Cut 1 pint of strawberries of uniform size in half lengthwise and place in a bowl.

In a blender or food processor, puree remaining pint of strawberries and add to bowl.
Gently toss to coat and arrange strawberry halves on cooled "cheese" cake in a circular
pattern. Refrigerate several hours before serving.

Description: "Fresh strawberries are used to top this "cheese" cake made with heart-
healthy tofu."

  Strawberry Mango Salsa

  1 pint strawberries -- rinsed and hulled
  1 small ripe mango -- coarsely chopped
  1 jalapeno chile -- seeded and minced
  1/4 cup red onion -- minced
  1/4 cup red bell pepper -- minced
  juice of 1 lime
  1 teaspoon balsamic vinegar (optional)
  salt and freshly ground pepper -- to taste
  1/4 cup fresh mint leaves -- minced

Coarsely chop the strawberries and place in a bowl. Add the mango, chile, onion and bell
pepper, along with the lime juice, vinegar (if using) and salt and pepper to taste. Sprinkle
with mint and toss gently to combine. Taste to adjust seasoning and serve.

Description: "This decidedly different salsa makes a colorful accompaniment to veggie
burgers and grain and bean dishes."

Strawberry Tiramisu

  1/2 cup part-skim ricotta cheese
  3 tbsp nonfat cream cheese
  2 tbsp confectioners' sugar
  1/2 tsp grated orange zest
  3/4 cup thawed frozen light nondairy whipped
  topping
  2 pints strawberries -- hulled and sliced
  (reserve 6 whole berries for garnish)
  3 tbsp granulated sugar
  2 tbsp orange-flavored liqueur
  2 tbsp orange juice
  1 pkg ladyfingers -- (3 oz) separated
  and halved

In a food processor, puree the ricotta, cream cheese, confectioners' sugar and orange zest. Transfer to a medium bowl and fold in the whipped topping. In the same food processor (no need to clean), puree 1 cup of the sliced strawberries, the granulated sugar, liqueur and orange juice. Spoon 1 tablespoon of the strawberry puree into each of six dessert glasses. Top each with two ladyfinger halves. Spoon another tablespoon of the puree over the ladyfingers. Top with half of the sliced strawberries and then half the cheese mixture (dividing amongst the 6 servings). Top each glass with the remaining ladyfingers. Spoon on the remaining puree, berries and cheese mixture. Cover each glass with plastic wrap and refrigerate overnight. Garnish each with a whole strawberry before serving.
