Indonesian Chicken Patties

Recipe By : Gail Hall on CBC Radio
Serving Size : 24 Preparation Time :0:00
Categories : Volume 12-01 Jan 2009

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 pound chopped chicken
1 1/2 teaspoons fresh grated ginger
2 teaspoons minced fresh garlic
1 tablespoon Hoisin sauce -- (1 to 1 1/2)
Sea salt and freshly ground pepper -- to taste
2 tablespoons finely chopped green onion
1/2 cup white sesame seeds
1/2 cup black sesame seeds
1/4 cup vegetable oil for frying -- (1/4 to 1/2 cup)
Dipping Sauce:
1/4 cup black rice vinegar
3/4 cup Hoisin sauce
1 tablespoon white vinegar
2 tablespoons honey

Mix all ingredients together in a bowl expect the sesame seeds. Combine
seeds together in a smaller bowl and set aside. Using a small scoop or
spoon, portion the chicken mixture into balls, flatten and dip in sesame
seeds to coat. Heat vegetable oil in a frying and fry chicken patties on
both sides until lightly browned. Place on a prepared cookie sheet and
bake at 350F (180C) for 10 to 15 minutes. Serve warm with dipping sauce.

Yields 2 dozen patties.

Dipping Sauce:

Mix and serve.

If choosing to prepare these dishes in advance and freezing them, cook
them fully, cool and place in plastic bags and then in an airtight
container. To serve once frozen, thaw in the refrigerator overnight. Place
on a baking sheet or pan, lightly covered with foil and reheat at 350F
(180C) for about 10 to 15 minutes. For the Indonesian patties, add a few
tablespoons of water to the baking pan before covering with foil - do
prevent the patties from becoming too dry.

Gurvinder's Wine Pairing: Ruggeri Prosecco 'Giall'Oro', Veneto Italy ($24)
"Sparkling wines are great with hors d'oeuvres. They are versatile, fun
and festive. Prosecco in particular is so pleasant to drink and pairs
with a broad range of food. Ruggeri is considered to be the top producer
of Prosecco and their Giall'Oro has fresh, clean flavours of apple, pear
and peach with a lively finish. A perfect match with the chicken."
