Zucchini Bread with Pecans and Cherries

Amount Measure Ingredient -- Preparation Method

1 1/2 cups all-purpose flour
3/4 cup white granulated sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2 large eggs
1/2 cup vegetable oil
1 1/2 cups shredded unpeeled zucchini -- lightly packed
1/2 cup chopped pecans
1/2 cup sundried cherries -- *
Grated zest of 1 lemon or orange

Preheat oven to 350F. Grease the loaf pan or line with parchment paper.

In a bowl, sift flour, sugar, baking powder, baking soda, salt and
cinnamon.

In another bowl beat eggs and oil together and add zucchini, pecans,
cherries and zest. Pour over dry ingredients and blend until mixed. Batter
will be quite stiff.

Place in loaf pan, smooth out surface and bake for 40 to 50 minutes, until
a toothpick, knife or bamboo skewer inserted, comes out clean.

Cool completely and turn out of pan. Slice and serve.

Freezes very well.

Yields one 9-inch x 5-inch loaf.

"*The Sundridge Orchards Montmorency sundried cherries are a great addition
to this bread. They are available at Costco and other grocery stores. You
can also use raisins, cranberries or other favourite dried fruits."
